Beef 706 Program

In January I got to attend the Beef 706 program sponsored by the Texas Beef Checkoff and Texas AgriLife Extension Service. The program is held at the meats lab on campus and is organized by Dr. Dan Hale along with a great list of other specialists and researchers. I don't think I can remember spending one and a half days on something so interesting and informative. There was so much information that I need to take it over again just to go over what I missed. We discussed live animal quality, pricing, processing, products and more. We had demonstrations or maybe I should say assignments to quality grade live cattle, fabricate a carcass (okay maybe only half a carcass), be a taste panel and more. If you get a chance to go it is well worth it just for the food but you will get much more!
